our nation was the most prosperous in the world,
had absolutely no national debt, had the largest
middle class in the world and Mom stayed home
to raise the kids.

Well, we started supporting other countries.

For the items on your list that were technologically available for taxes 100 years ago, most were in fact taxed. For example, your list includes liquor tax. One of the biggest tests faced by President Washington was the Whiskey Rebellion, which was precipitated by high taxes on Whiskey.

What has changed over the past 100 years is that the tax system has shifted from being mostly based on consumption (taxes on goods and services such as toll roads, luxury items, etc.) to one that is heavily based on income.
