I just noticed today that the coolant bar reading is full or high at start up cold. No red light, fan started after 12 minutes at idle for 2 minutes but bar temperature never go down.

Check under the front of the engine, that is where the temp sensor is for the dash. The wire may have come loose. The sensor at the rear of the cylinder head is the one that drives the ECU, red light and the fans.

Thank you very much. I will look into it next time I open the Tupperware. Doesn't worry me much at the moment because fan is working and no red light warning. No overheating. Is that the reading for a good thermostat?

Yes that would be for the sensor at room temp.
