Is there a video or service manual on how to remove the rear tire ?

Centerstand it, remove bag on muffler side, remove muffler, remove the rim bolts and bam she’s off.
youtube is your friend. There’s a clip there.

One thing I do when working on the bike while on the center stand, moreso with the rear tire off, I take a tie down strap and tie the center stand forward to make sure I don't accidently push the motorcycle forward, hard enough to push it off the center stand.

Very easy to do. Just remember to torque the bolts to the correct spec when putting it back together.

I see a comment above (post #3), about only removing one pannier.
May I courteously suggest that is ill thought through. Take both panniers off to increase the weight bias toward the front wheel. Also, there is less chance that someone will bang against the bike. Also also, there is less chance someone will lean down on the bike.
