Joe.. I'd put some stainless bolts from the inside...that way you have a "smooth" surface on the inside. I would use some "nylock" nut and stainless washer to assemble. Once you do that, you'll have some "clean" showing on the outside. I've seen some real "shallow" nylocks that should do a real nice job.
If there is too much of the bolt showing, just cut with a Dremel "cutoff" wheel.
I'd say you could use some "skull" bolts like the HD guys use, but, that might not be too good on the LT..... unless you want parts falling off.
