I'm not sure what an adventure hybrid is. The adjustable stem doesn't appear to be a good idea to me, if you were off in the woods. You don't want that thing "adjusting" then.
As for the full suspension, unless you're going do be a downhiller, you won't need the full suspension. They go down hill great. Everything I've heard about them is that they don't do so well when you're climbing.
I can't speak for the Windsor brand. I've never heard of them. Your best bet is to go with one of the major brands, Trek, Cannondale, Raleigh, GT, Specialized, and Giant to name a few. Bikes will be available in entry level models all the way up to full race models. Frames are pretty much the same, but it's the components that increase the price.
Good advice about going to a bike shop and finding out what fits.
