Cool A new recipe

Tomato Tapenade


From Recipe is from “River Road Recipes IV: Warm Welcomes.”

Serves 12.

Serve French bread, water crackers, pita bread, bagel chips or another type of sturdy cracker with this alternative to the usual salsa. Toss any leftovers with mixed greens to make an outstanding salad. Leftovers can also be served as a sandwich spread on a rustic bread.

1 pint grape tomatoes, cut into quarters (small tomatoes work fine, too)
1/2 cup (2 ozs.) crumbled feta cheese (can use less, if desired)
4 to 5 tbls. olive oil
1/4 cup chopped green onions
1/4 cup drained and rinsed capers
1 1/2 to 2 ozs. chopped or sliced black olives
2 tbls. Italian seasoning
Salt and pepper, to taste

1. Mix the tomatoes, cheese, olive oil, green onions, capers, olives, Italian seasoning, salt and pepper in a bowl.

2. Spoon the tomato mixture into a shallow baking dish that has been sprayed with cooking spray so the mixture won’t stick to the dish.

3. Bake at 350 degrees for 20 minutes. Store leftovers covered in the refrigerator.

Testing note: I find that feta is salty, so I did not add extra salt to the mixture. If you like slightly more zing, add a couple of drops of Tabasco.

I made this today and it is very good! Try it you'll like it!

Channing? Do you mean because of the cooking? Actualy we do alot of cooking on the tug, how do you think I got so big to begin with?

yeah.. I've worked, lived and eaten on them. but not at the same level of professionalism you have. Just don't let them get away with serving you on pink plates...
