IVe got an 03 K 1200 LTC and with the drivers backrest in place it is really tight for my wife to sit on the back to the point shes very uncomfortable.Do you supposed to remove it for 2-up riding?? NEw to the K and need some advice.

Yup! The tail trunk - top case - or (new term to me) tour pack can be moved back about 2 inches.
Brace the tail trunk lid with a pillow, box or something in the full open posistion. This will prevent 'hyper extending' the hinges when the retension strap is released.
Unscrew the retention strap screw
Pull the retention strap off it's mount point
Using a small screw driver, push the liner retension clips away from the latch hooks.
Lift the rear of the trunk liner out
Pull the liner out - it's held in with hook/loop, just pull firmly
(instructions with pictures can be found in the 'Installation Instructions' at http://millenhaus.com)
Now, in the bottom of the tail trunk, you'll see 4 bolts. Remvoe the 4 bolts.
Be careful - at this pint there's nothing holding the tail trunk to the bike! It can tip off.
Slide the tail trunk back so the rear most set of bolt holes are visible through the holes in the bottom of the tail trunk. Instert bolts and firm them up. Re-mount the liner and re-attach the lid retension strap.
Voila! More back room for your pillion and if you look behind the passanger seat, there's a space to stash select items as well. Such as a folded up weather cover for the bike, spare rain gear or small packs.
If you'd like to remove the tail trunk - just pull the passanger seat first - find the two twist connectors connecting the wire harness to the tail trunk - pull them from their snap retainers, untwist and disconnect them and the proceded with removing the 4 bolts. Remove the tail trunk and set it aside.
Replace the 4 bolts to hold the underliner inplace.
There is an after market rack that can be mounted in place of the tail trunk - called a Fort Wayne Rack if I remember correctly. Someone else will chime in with a link for ya.

If you got the owners manual with the bike, there are three pages with pictures showing how to move it back to the rear position.
