I nearly have the hitch I was building complete (Just needs paint, but I am waiting for the wether to improve). Now, I need a connection for the lights to a trailer. Where is a convenient place to tap into the lighting circuit?

There is the flat connector behind the brake light, but it seems a little cramped there and you would need to provide a way to still allow the rear tupperware to be removed. I was thinking it would be better to tap in under the seat somewhere.

What have the DIYers found to be best or where do the hitch companies tie in?

IMO, the least intrusive and easy way to "tap" into the tail lights is to use "dual female flat blade" connectors.

There are no wires to cut, no damage and when removed there will not be a trace of the installation.

I did this to mine 5 years ago and have not had a problem with it since. I also added the Bushtec isolator package to my trailer light connections.
