I have 2007 LT that came with 3 year warranty. Now it's time for the 12k service, which costs about $800. I know I can do this myself, I've done that on my previous LT, but would that void the warranty?

No not in the US if you do the work correctly and keep good records/recepts.
But it helps if you have a good dealer that will support you if something goes bad.

Thanks John,
I will get the Oil filter and fluids from my local dealer, so receipts should not be an issue. I have already purchased the "special" oil filter wrench and the CD Service Manual from them.
I'm not sure what did you mean by a good dealer that will support me if something goes bad.

Several of us are getting together this weekend in L.A. to do a general Service Party and work on a few bikes. You can find info in this link (http://www.bmwlt.com/forums/showthread.php?t=31549). You said you have done this work before, but you may enjoy hanging out with some locals and maybe learning a thing or two.

From my personal experiance:
My R1200GS has NEVER been Serviced at the dealer after the 600 mile checks.
I have done all of it over the last almost 50,000 miles.
When the Final Drive failed in Kentucky, Bloodworths BMW had no problems at all covering it under warranty.
