What if any type of knives do you carry when touring? After watching Feasting on Asphalt with Alton I picked up one of the Kershaws to have with me. Always nice to have a knife along if only for cutting cheese and buttering bread.

About $20 from Wally-World. Great all around piece of tool to have on hand. The 'tanto' blade shape is very handy for all kinds a doings.

For knives I carry a small Victorinox Swiss Army knife (http://www.swissarmy.com/MultiTools/Product.htm?category=multitoollights&product=53851&), the one with a pen & red LED light. Snaps in just right in the stingray compartment where I guess there was originally some kind of 'torch' (flashlight to us American Germans).
In the toolkit I have the Gerber Multi-Plier (http://www.gerber-tools.com/Gerber-Multi-Plier-600-Needlenose-07530.htm) (needlenose) which has several blades. Similar to the Leatherman.
And then there's whatever might be in my pocket at the time, usually a small Gerber lockblade (http://www.gerber-tools.com/Gerber-Paraframe-I-fine-edge-22-48444.htm), the one with the skeleton handle.
I have a couple other tiny LED flashlights in various places too but the most awesome one I found is the newer Rayovac 3w headlight (http://www.rayovac.com/flashlight/lux3aahdlt-b.shtml). A bit pricey, around $25 shipped but man is this thing bright!

Leatherman Surge - straight blade, serrated blade and a saw blade; not to mention all the other useful parts...

Not knowing what the "Feasting on Asphalt" reference is, are these
knives for protection or utility?

Victorinox Swiss army knife always in the stingray
6" Buck single blade folding knife in pouch on my belt
6" single blade folding knife in my "kitchen bag."

I think 'Feasting' is a food/cooking show using a motorcycle to travel around and find new stuff.
Knife is Utility - least for me.
For protection, a .45 ACP handles that nicely. More important is not getting in a situation where it'd be needed.

I used to keep a Gerber Harley Davidson multi-tool in my top-case...
...but it kept leaking oil.
So I switched to a SOG.
