You're bound to find no shortage of opinions around here, all you have to do is share what you are looking for, and you would be amazed at the level of support and feedback you will receive.
The "SEARCH" function can also lead you to discussions that have already been posted on your areas of interest.

1) tether the mirrors http://www.ascycles.com/detail.aspx?ID=39112
2) Upgrade the low beam to HID http://www.bmwlt.com/forums/showthread.php?t=22443
I would also recommend replacing your shift linkage with the one manufactured by philjohn@invisimax.com. Send him an e-mail and he will give you the specifics.
Not knowing the specifics of your bike (does it have an intercom, GPS, heated seats, etc...) you will have to tell us a little more about Betty. Maybe she needs new shocks, a different windshield, a back rest...
The accessories will also depend on what kind of riding you will do. Commute? IBA rides? Solo or 2-up?
From there we will be more than happy to help you spend your money!:D

Craig, warning, warning, warning! Except for the items posted above by Gilles, JUST SAY NO. Buying accessories (some folks refer to them as farkles, some folks hate the term) starts out as a well intentioned desire to improve and/or make the bike more comfortable, and slowly and insidiously progresses to a degenerative condition that just takes hold of you, man, just clutches your soul and paralyzes self control, it eats at you, you become consumed . . . OK, deep breath here. I gotta go call someone from my recovery group, I'm having visions of signal light mirrors . . .
